Dairy-Free Strawberry Brown Sugar Sherbet.

Springerle, first attempt! This old German cookie is whack - uses baker’s ammonia😬, needs 30 solid minutes in the stand mixer💪, dries for 24 hours before baking🕑, optionally painted with luster dust🎨, THEN ages for weeks 📅 in a tin with an apple cut in half 🍎 for the flavors (anise and lemon) to “develop”🤷‍♀️… but look at how well they took the stamp🤩! Nut-free French macaroons!!!!!!💃🏻💃🏻💃🏻(Also gluten free AND dairy free- oh my, yes! 🥰) A recipe a year in the making, such a learning curve! 📈 I have obviously never been able to even taste a macaron (evil almonds!🤢), so received great input and taste testing from my wonderful friends! ❤️ So much research went into finding a substitute for almonds: turns out sunflower seeds 🌻 have the same fat-protein-fiber content and are perfect (but a bitch to grind yourself 😅, using @gerbsallergyfriendlyfoods from now on)! Then, learning the technique took some work 💪 (YouTube vids from @baketoujours were a lifesaver 🙏). The final piece of the puzzle was discovering water ganache - the chocolate savior for the lactose intolerant and vegan - it breaks all the chocolate 🍫💧🤷‍♀️ rules but it works! 🎉🎉🎉 Here flavored with freeze dried strawberries 🍓 and balsamic vinegar (and a bit of roasted strawberry in the center, inspired by @emcdowell ‘s pie recipe) - heaven! 🤤😇🤤😇 Recipe to come soon!!! #macaronstagram #macarons #frenchmacarons #nutfree #nutfreebaking #nutfreemacarons #sunflowerseeds #forthewin #recipedevelopment #strawberrybalsamic #waterganache #veganganache #dairyfreeganache #guittardchocolate
